Grilled Swordfish with
Key Lime Mustard Sauce
Serves 4
1 cup mayonnaise
1/4 cup whole grain mustard
1 tablespoon Key Lime Juice, fresh or bottled
Dash of green hot sauce (just to add a little interest)
4 swordfish steaks about 1/2-inch thick
Salt and freshly ground black pepper
Combine the mayonnaise, grain mustard, Key Lime juice, and hot
sauce in a bowl and mix well. Cover and set aside until ready to
use. (The sauce will keep for weeks in the fridge.)
Season the swordfish with salt and pepper and place in a glass-baking
dish. Pour about 1/2 cup of the Key Lime Mustard sauce over top
and turn several times to coat well. Cover and place in the refrigerator
for 30 to 40 minutes, turning once during the marinating process.
Heat the grill while the fish is marinating. Grill swordfish on
hot grill for about 1 1/2 to 2 minutes per side depending on the
thickness of the steak. Serve at once with the remaining mustard
sauce on the side.
