Producer's Notes:
Talk about too much information--we had more great footage for this
show then we could ever possibly use. Chestertown is quaint and
charming, and full of picturesque scenes. The volunteers in Millington
were colorful and fun to watch. Edie threw us for a loop when she
began her dressing for the chicken salad--it wasn't the same recipe
that is in the book! (See Edie's new recipe below.) Turns out there
had been some miscommunication, and John had obtained the wrong
one months before.

Chicken Salad Dressing
Edie Morales of Millington demonstrated this classic Eastern Shore
recipe on the show--to John's surprise. He had included in the book
a more traditional mayo-based dressing with the Millington Chicken
Salad recipe (p.178). This version is sweeter and lighter-tasting,
and puts this chicken salad in a different league than ordinary
ones.
Makes 2 cups
* 1⁄2 cup reserved chicken broth
* 1⁄2 cup white vinegar
* 1⁄2 cup sugar
* 4 egg yolks, beaten
* 1 tablespoon Dijon mustard
* Salt and freshly ground black pepper, to taste
* 1⁄2 cup whole milk
* 4 tablespoons butter
Combine all the ingredients, except for the butter, into a saucepan.
Whisk well and cook over a medium heat, stirring constantly until
the mixture thickens. Remove from the heat and whisk in the butter.
Let the sauce cool to room temperature, or refrigerate until ready
to use.
